My favorite dish (& one that EVERYONE loves once they have tried it) is a green bean & corn casserole dish I make-………. YOU HAVE TO MAKE IT!!!!!…… 2 cans corn, 1 can green beans, 8 oz fat free sour cream (or reg), 1 can of cream of celery (or use cream of mushroom or cream of chicken as a substiture), 1 cup cheddar cheese & 1/4 cup purple onion chopped in small pieces. Combine all ingredients in mixing bowl. Pour in a glass dish. Melt 1 stick of butter (or margarine) & crush 1 row of Ritz crackers until it they are evenly coated witht he butter. Spread cracker mixture over the mixture. Bake at 375 for 35 mins or until the top starts to bubble. Serves 6-8. You will definatly want to make to batches! It goes QUICK! Best part you can prep this the night before (except for the cracker mixture on top). TRY IT!!!!! =)

    1/2 large onion, chopped
1 long Italian green pepper, diced
    2 cloves garlic, minced
    1 tsp. adobo
1 slice ham (1/2 in. thick), diced
    1 tbsp. tomato paste

Add garlic and adobo; sauté 1 minute. Add ham and sauté 1 minute, then add tomato paste and cook 2 minutes. Add chicken broth and bring to boil.
